Campo delle Oche Integrale from Fattoria San Lorenzo is a special version that is only produced in Magnum. It consists of 97% Verdicchio grapes and a micro-addition of slightly dried malvasia left to macerate. Fermentation with indigenous yeast takes about 3 months, then the wine lies on the same yeast for 4 years, during which the batonnage technique is used. The wine stays in the concrete all the time.
Integral because "it is bottled the way it is", without make-up. Neither filtration nor clarification is performed. Only 500 Magnum bottles are produced.
Only he can make such wine: Natalino Crognaletti.
Tasting notes: The straw-yellow scent expresses a beautiful olfactory spectrum composed of wonderful tones of acacia, pear, apple, almond. The floral touch, including saffron, opens up a fresh taste with a good aroma, supported by a good structure and a certain softness. It closes with a particularly pronounced finish with slightly bitter tones.
Pairing: The white "Campo delle Oche", which goes well with rich fish dishes, goes well with the whole meal. Appetizers based on mussels or clams, risotto and generally first courses based on seafood, fried foods and baked fish.
Grape variety: Verdicchio
